My New Favorite Recipe

here is Lady Sadie- who also loves to chew on raw spinach and like goat cheese off the floor while I am cooking this!
Chicken Breast stuffed with Goat Cheese and Spinach

(I have adjusted the recipe to an easier/quicker version)

Serves: 4

Prep time:15 min

Cook time: 35min


3/4 bag of Spinach

4 tablespoons extra virgin olive oil

2 garlic cloves

light or regular goat cheese (as little or much as you want)

4 boneless, skinless chicken breasts

sea salt and pepper to taste


Preheat oven to 400 degrees. Slice uncooked chicken breasts through the middle almost in half, but leave one side in tact. Spread goat cheese on bottom half of chicken and set aside in a oven safe dish with one table spoon of olive oil. Heat 3 tablespoons of olive oil in a frying pan on medium high heat. Mince the garlic and heat in oil until fragrant (30 seconds) stirring constantly. Add spinach and toss until wilted. Add salt and pepper to taste. Stuff chickens with spinach evenly, leaving a little to put ontop of the chicken. Close the chicken up. put left over spinach on each chicken breast and sprinkle with some goat cheese. Salt and pepper to taste, drizzle a little olive oil if you'd like and put in the oven. Cook for 35 minutes. Serve with a barley and rice mix (kashi has an amazing one) and pears! DELISH!
